Whether it’s Cinco de Mayo or the middle of October, Mexican food is always the perfect celebratory fare. Chef Christopher Lee highlights the flavors from “south of the border” with this lively feast. Chef Chris begins the evening with the spicy, yet flavorful, tortilla soup. Chicken enchiladas (made with a homemade enchilada sauce) serve as our main entrée. Freshly made refried beans and traditional Mexican rice will accompany. Chef Chris’s festive dessert is capirotada—a sweet Mexican bread pudding made with piloncillo (Mexican brown sugar), raisins, walnuts, and cheese.
