As exciting as Rome is by day, it becomes simply enchanting as evening falls. The city fills with a soft glow, fountains sparkle, music can be heard in the air, and the sidewalks are abuzz with people meeting and greeting—and deciding where to have dinner! For this class, Chef Domenica Marchetti has created a selection of dishes which perfectly captures what might be on the menu at a little trattoria just off the Piazza Navona. The menu includes: gnocchi alla Romana (tender gnocchi made with semolina in the Roman style, cut into rounds, and baked with cheese); pollo al limone (oven roasted chicken with lemon); and, a salad of bitter greens.
